- 1 prepared sponge cake or ladyfingers (about 300 g / 10 oz), cut into cubes
- 120 ml (1/2 cup) sherry or fruit juice
- 500 ml (2 cups) whole milk
- 4 large egg yolks
- 100 g (1/2 cup) granulated sugar
- 30 g (1/4 cup) cornstarch
- 1 tsp vanilla extract
- 300 ml (1 1/4 cups) heavy cream
- 2 tbsp powdered sugar
- 300 g (2 cups) mixed berries or sliced fruit
- 2 tbsp fruit jam (optional)
- Toasted almonds or shaved chocolate (optional)
Instructions
- Heat milk until warm. Whisk egg yolks, sugar, and cornstarch, then slowly add milk. Cook until thick and stir in vanilla. Cool slightly.
- Layer sponge cake in a bowl and drizzle with sherry or juice.
- Add a layer of fruit and optional jam.
- Pour custard over and smooth evenly. Repeat layers.
- Whip cream with powdered sugar and spread on top.
- Garnish as desired and chill for at least 4 hours before serving.
