Ingredients

  • 1 prepared sponge cake or ladyfingers (about 300 g / 10 oz), cut into cubes
  • 120 ml (1/2 cup) sherry or fruit juice
  • 500 ml (2 cups) whole milk
  • 4 large egg yolks
  • 100 g (1/2 cup) granulated sugar
  • 30 g (1/4 cup) cornstarch
  • 1 tsp vanilla extract
  • 300 ml (1 1/4 cups) heavy cream
  • 2 tbsp powdered sugar
  • 300 g (2 cups) mixed berries or sliced fruit
  • 2 tbsp fruit jam (optional)
  • Toasted almonds or shaved chocolate (optional)

Instructions

  • Heat milk until warm. Whisk egg yolks, sugar, and cornstarch, then slowly add milk. Cook until thick and stir in vanilla. Cool slightly.
  • Layer sponge cake in a bowl and drizzle with sherry or juice.
  • Add a layer of fruit and optional jam.
  • Pour custard over and smooth evenly. Repeat layers.
  • Whip cream with powdered sugar and spread on top.
  • Garnish as desired and chill for at least 4 hours before serving.
