- 2 cups (250 g) all-purpose flour
- 1 cup (100 g) fresh cranberries, rinsed and dried
- ¾ cup (150 g) granulated sugar
- ½ cup (120 ml) whole milk
- ½ cup (113 g) unsalted butter, melted and slightly cooled
- 2 large eggs
- 1 tablespoon fresh orange zest
- ¼ cup (60 ml) fresh orange juice
- 2 teaspoons baking powder
- ½ teaspoon salt
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C) and prepare a 9 x 5-inch loaf pan with grease and parchment paper.
- Rinse and thoroughly dry the cranberries, cutting some in half if desired.
- Whisk together flour, baking powder, and salt in a medium bowl.
- Whisk melted butter and sugar together, then add eggs, orange zest, orange juice, vanilla, and milk.
- Add the dry ingredients to the wet ingredients and stir gently until just combined.
- Fold the cranberries into the batter without overmixing.
- Transfer the batter to the prepared loaf pan and smooth the top.
- Bake for 50 to 60 minutes, checking the center with a toothpick around 50 minutes.
- Cool the bread in the pan for 10 to 15 minutes, then transfer it to a cooling rack.
- Let the loaf cool further before slicing and serving
