- 1 large ripe banana, about 120 g
- 1 cup unsweetened milk, 240 ml
- 1/2 cup plain Greek yogurt, 120 g
- 1/4 cup chia seeds, about 40 g
- 1 tablespoon pure maple syrup, 15 ml, optional
- 1/2 teaspoon pure vanilla extract, 2.5 ml
- 1/4 teaspoon ground cinnamon, 1 g
- Pinch of salt
Instructions
- Mash the ripe banana in a medium mixing bowl until mostly smooth.
- Add Greek yogurt, milk, vanilla extract, cinnamon, salt, and optional maple syrup. Whisk until creamy.
- Stir in the chia seeds thoroughly, making sure no dry seeds remain.
- Let the mixture rest for 5 minutes, then stir again.
- Cover and refrigerate for at least 4 hours or overnight.
- Stir the chilled pudding and add a splash of milk if you prefer a thinner consistency.
- Spoon into serving glasses or jars and add your favorite toppings.
- Serve cold and enjoy
