  • 2 tbsp maple syrup or honey
  • 1 tsp vanilla extract
  • 1/4 tsp ground cinnamon (optional)
  • Pinch of salt
  • 2 cups fresh strawberries, hulled
  • 1 tbsp maple syrup or honey
  • 1 tsp lemon juice
  • Fresh sliced strawberries (optional)
  • Granola (optional)
  • Chopped almonds (optional)
  • Unsweetened coconut flakes (optional)
  • Greek yogurt (optional)
  • Mint leaves (optional)

Instructions

  • Whisk together the almond milk, maple syrup, vanilla extract, cinnamon, and salt.
  • Add the chia seeds and whisk thoroughly for about 1 minute.
  • Let the mixture sit for 5 minutes, then whisk again.
  • Cover and refrigerate for at least 4 hours or overnight.
  • Blend the strawberries with maple syrup and lemon juice until smooth or pulse for a chunkier texture.
  • Refrigerate the strawberry mixture until needed.
  • Stir the chilled chia pudding and add a splash of milk if it is too thick.
  • Spoon a layer of chia pudding into serving jars or bowls.
  • Add a layer of the strawberry mixture.
  • Repeat the layers until the containers are full.
  • Top with fresh strawberries, granola, chopped almonds, coconut flakes, Greek yogurt, or mint.
  • Serve chilled or store in the refrigerator until ready to enjoy.
