- Greek yogurt (optional)
- Mint leaves (optional)
Instructions
- Whisk together the almond milk, maple syrup, vanilla extract, cinnamon, and salt.
- Add the chia seeds and whisk thoroughly for about 1 minute.
- Let the mixture sit for 5 minutes, then whisk again.
- Cover and refrigerate for at least 4 hours or overnight.
- Blend the strawberries with maple syrup and lemon juice until smooth or pulse for a chunkier texture.
- Refrigerate the strawberry mixture until needed.
- Stir the chilled chia pudding and add a splash of milk if it is too thick.
- Spoon a layer of chia pudding into serving jars or bowls.
- Add a layer of the strawberry mixture.
- Repeat the layers until the containers are full.
- Top with fresh strawberries, granola, chopped almonds, coconut flakes, Greek yogurt, or mint.
- Serve chilled or store in the refrigerator until ready to enjoy.
