- 2 cups Greek yogurt
- 1 cup whole milk or almond milk
- 2 cups fresh strawberries, hulled
- 6 tablespoons chia seeds
- 2 tablespoons maple syrup or honey
- 1 teaspoon vanilla extract
- 1 tablespoon fresh lemon juice
- 1/4 teaspoon fine sea salt
- Fresh sliced strawberries, for topping (optional)
- Granola, for topping (optional)
- Toasted coconut flakes, for topping (optional)
- Chopped almonds, for topping (optional)
- Fresh mint leaves, for garnish (optional)
Instructions
- Wash, hull, and blend the strawberries with the maple syrup, vanilla extract, and lemon juice until smooth.
- Whisk the strawberry puree with the Greek yogurt, milk, and sea salt until fully combined.
- Gradually stir in the chia seeds while whisking continuously.
- Let the mixture rest for 10 minutes, then stir again to prevent clumps.
- Divide the mixture evenly into serving jars or airtight containers.
- Cover and refrigerate for at least 4 hours or overnight.
- Stir the pudding before serving and add a splash of milk if a thinner consistency is desired.
- Top with fresh strawberries, granola, coconut flakes, almonds, or mint.
- Serve chilled and enjoy.
