- 1 lb. Italian sausage
- 3 medium sweet potatoes, about 1½ lb.
- 1 medium yellow onion
- 3 cloves garlic
- 4 cups chicken broth
- 1 cup heavy cream
- 2 tbsp. unsalted butter
- 1 tsp. dried thyme
- ½ tsp. smoked paprika
- ½ tsp. salt
- ¼ tsp. black pepper
- 2 cups fresh baby spinach, optional
- 2 tbsp. fresh parsley
Instructions
- Brown the Italian sausage in a large pot over medium heat, breaking it into bite-sized pieces. Remove and set aside.
- Melt the butter in the same pot, then sauté the diced onion until softened.
- Add the minced garlic, thyme, and smoked paprika. Cook for about 30 seconds until fragrant.
- Add the cubed sweet potatoes and chicken broth. Season with salt and black pepper.
- Bring to a gentle boil, then reduce the heat and simmer for 15 to 20 minutes, until the sweet potatoes are fork-tender.
- Return the browned sausage to the pot and mash some of the sweet potatoes to naturally thicken the soup.
- Reduce the heat to low and stir in the heavy cream.
- Add the spinach, if using, and cook for 1 to 2 minutes until wilted.
- Taste and adjust the seasoning as needed.
- Garnish with fresh parsley and serve warm with crusty bread.
