- 2 cups crushed golden sandwich cookies
- 6 tbsp melted butter
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 tsp vanilla extract
- 1/2 cup sour cream
- 1/2 cup heavy cream
- 1 cup crushed freeze-dried strawberries
- 1 cup crushed cookies
- 3 tbsp melted butter
Instructions
- Preheat oven to 325°F and prepare a springform pan.
- Mix crushed cookies with melted butter and press into the pan. Bake for 10 minutes and cool.
- Beat cream cheese and sugar until smooth.
- Add eggs one at a time, mixing gently.
- Stir in vanilla, sour cream, and heavy cream until smooth.
- Pour filling over crust and place pan in a water bath.
- Bake for 55 to 65 minutes until center slightly jiggles.
- Cool in oven with door slightly open for 1 hour.
- Chill in refrigerator for at least 4 hours.
- Mix strawberry topping ingredients and sprinkle over cheesecake.
- Slice and serve chilled.
