Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup sourdough starter or discard
  • 1/2 tsp salt
  • 1/4 cup olive oil or melted butter
  • 1/3 cup warm water
  • 1 lb ground beef or chicken
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup diced bell peppers
  • 1 tsp paprika
  • 1/2 tsp cumin
  • Salt and black pepper to taste
  • 1/4 cup chopped olives (optional)
  • 1/4 cup shredded cheese (optional)
  • 1 egg

Instructions

  • In a bowl, mix flour and salt, then add sourdough starter, oil, and water to form a dough. Knead until smooth and let rest.
  • Cook ground meat in a skillet, then add onion, garlic, and peppers. Stir in spices and let cool.
  • Divide dough and roll into small circles.
  • Add filling to each circle, fold over, and seal edges tightly.
  • Brush with beaten egg.
  • Bake until golden or fry until crispy.
  • Let cool slightly and serve warm.
