Description

A fresh, colorful pasta salad that is quick to make and perfect for warm days. This is the easy side dish everyone will ask you to bring again.


Ingredients

  • 12 oz rotini or fusilli pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red bell pepper, chopped
  • 1/4 cup red onion, sliced
  • 1/2 cup black olives, sliced
  • 1/2 cup feta cheese, crumbled
  • 1/3 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • 1 clove garlic, minced
  • Salt and black pepper to taste

Instructions

  • Cook pasta in salted boiling water until al dente.
  • Drain and rinse under cold water to cool completely.
  • Chop all vegetables and prepare the feta cheese.
  • Whisk olive oil, vinegar, mustard, honey, garlic, salt, and pepper in a bowl.
  • Combine pasta, vegetables, olives, and feta in a large bowl.
  • Pour dressing over the salad and toss well.
  • Chill in the refrigerator for at least 30 minutes before serving.
