Description
A fresh, colorful pasta salad that is quick to make and perfect for warm days. This is the easy side dish everyone will ask you to bring again.

- 12 oz rotini or fusilli pasta
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red bell pepper, chopped
- 1/4 cup red onion, sliced
- 1/2 cup black olives, sliced
- 1/2 cup feta cheese, crumbled
- 1/3 cup olive oil
- 2 tbsp red wine vinegar
- 1 tsp Dijon mustard
- 1 tsp honey
- 1 clove garlic, minced
- Salt and black pepper to taste
Instructions
- Cook pasta in salted boiling water until al dente.
- Drain and rinse under cold water to cool completely.
- Chop all vegetables and prepare the feta cheese.
- Whisk olive oil, vinegar, mustard, honey, garlic, salt, and pepper in a bowl.
- Combine pasta, vegetables, olives, and feta in a large bowl.
- Pour dressing over the salad and toss well.
- Chill in the refrigerator for at least 30 minutes before serving.
