Ingredients

  • 4 ripe peaches, peeled and diced
  • 1 medium red bell pepper, finely diced
  • 1/2 cup red onion, finely diced
  • 1 medium jalapeño, seeded and minced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 fresh limes
  • 1 tablespoon olive oil (optional)
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 teaspoon chili powder (optional)
  • 1/2 teaspoon smoked paprika (optional)
  • 1 avocado, diced (optional)
  • 1/2 cup sweet corn kernels (optional)
  • 1/2 cup black beans (optional)

Instructions

  • Wash, peel, pit, and dice the peaches into small cubes.
  • Finely dice the red bell pepper, red onion, and jalapeño.
  • Chop the fresh cilantro.
  • Combine the peaches, bell pepper, onion, jalapeño, and cilantro in a large bowl.
  • Add the lime juice, olive oil, salt, black pepper, chili powder, and smoked paprika.
  • Gently toss until all ingredients are evenly coated.
  • Taste and adjust the seasoning if needed.
  • Refrigerate for 20 to 30 minutes to allow the flavors to blend.
  • Fold in the avocado, corn, or black beans just before serving if using.
  • Serve chilled with tortilla chips, tacos, grilled chicken, seafood, pork, or rice bowls.
