- 5 oz fresh baby arugula
- 2 large ripe peaches, sliced
- 1/2 cup crumbled goat cheese
- 1/2 cup toasted pecans, chopped
- 1/4 small red onion, thinly sliced
- 1/4 cup dried cranberries (optional)
- Fresh basil leaves for garnish
- 3 tbsp extra-virgin olive oil
- 1 1/2 tbsp balsamic vinegar
- 1 tbsp honey
- 1 tsp Dijon mustard
- 1/2 tsp minced garlic
- Salt to taste
- Freshly ground black pepper to taste
Instructions
- Wash and dry the arugula thoroughly.
- Slice the peaches into thin wedges.
- Thinly slice the red onion and soak it in cold water for 10 minutes if you prefer a milder flavor.
- Toast the pecans in a 350°F (175°C) oven for 5 to 7 minutes and allow them to cool.
- Whisk together the olive oil, balsamic vinegar, honey, Dijon mustard, garlic, salt, and pepper until smooth.
- Place the arugula in a large serving bowl.
- Arrange the sliced peaches evenly over the greens.
- Add the goat cheese, toasted pecans, red onion, and dried cranberries.
- Drizzle the dressing evenly over the salad.
- Toss gently until all ingredients are lightly coated.
- Garnish with fresh basil leaves and extra black pepper if desired.
- Serve immediately as a side dish or with grilled chicken, shrimp, or salmon
