Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 cup unsalted butter, cold and cubed
  • 1 large egg
  • 1 tsp vanilla extract
  • 3 cups fresh peaches, peeled and diced
  • 1/2 cup sugar
  • 2 tbsp cornstarch
  • 1 tbsp lemon juice

Instructions

  • Preheat oven to 375°F and line a 9×13-inch pan with parchment paper.
  • Mix flour, sugar, baking powder, and salt, then cut in butter until crumbly. Stir in egg and vanilla.
  • Press two-thirds of the mixture into the pan to form the crust.
  • Toss peaches with sugar, cornstarch, and lemon juice.
  • Spread the peach filling over the crust.
  • Sprinkle remaining crumb mixture on top.
  • Bake for 40–45 minutes until golden.
  • Cool completely, slice, and serve.
