- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tsp baking powder
- 1/4 tsp salt
- 1 cup unsalted butter, cold and cubed
- 1 large egg
- 1 tsp vanilla extract
- 3 cups fresh peaches, peeled and diced
- 1/2 cup sugar
- 2 tbsp cornstarch
- 1 tbsp lemon juice
Instructions
- Preheat oven to 375°F and line a 9×13-inch pan with parchment paper.
- Mix flour, sugar, baking powder, and salt, then cut in butter until crumbly. Stir in egg and vanilla.
- Press two-thirds of the mixture into the pan to form the crust.
- Toss peaches with sugar, cornstarch, and lemon juice.
- Spread the peach filling over the crust.
- Sprinkle remaining crumb mixture on top.
- Bake for 40–45 minutes until golden.
- Cool completely, slice, and serve.
