- 1/2 cup (100 g) packed light brown sugar

- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 4 large eggs
- 1 cup (240 ml) vegetable oil
- 1 can (15 oz/425 g) pure pumpkin puree
- 2 teaspoons vanilla extract
- 8 oz (226 g) cream cheese, softened
- 1/2 cup (113 g) unsalted butter, softened
- 2 cups (240 g) powdered sugar
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9 x 13-inch (23 x 33 cm) baking pan.
- Whisk the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves together in a medium bowl.
- In a large bowl, whisk the eggs, granulated sugar, brown sugar, oil, pumpkin puree, and vanilla until smooth.
- Add the dry ingredients to the wet mixture and stir gently until just combined.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 25 to 30 minutes, or until the center is set and a toothpick comes out with a few moist crumbs.
- Cool the bars completely on a wire rack.
- Beat the softened cream cheese and butter until smooth and creamy.
- Gradually add the powdered sugar, then mix in vanilla and salt until smooth.
- Spread the frosting over the cooled pumpkin bars, chill briefly if desired, slice, and serve.
