- 1 ½ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda

- ¾ cup granulated sugar
- 2 large eggs
- ½ cup vegetable oil or melted butter
- ⅓ cup fresh lemon juice
- 1 tablespoon lemon zest
- 1 teaspoon vanilla extract
- ½ cup milk or buttermilk
- 1 cup powdered sugar (optional glaze)
- 2–3 tablespoons lemon juice (for glaze)
Instructions
- Preheat oven to 350°F and prepare a loaf pan with grease and parchment paper.
- Whisk together flour, baking powder, baking soda, and salt in a bowl.
- In another bowl, mix sugar and eggs, then add oil, sourdough discard, lemon juice, zest, vanilla, and milk.
- Combine dry ingredients into wet ingredients and stir gently.
- Pour batter into pan and smooth the top.
- Bake for 50 to 60 minutes until a toothpick comes out clean.
