  • 2 large eggs
  • ½ cup vegetable oil or melted butter
  • ⅓ cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract
  • ½ cup milk or buttermilk
  • 1 cup powdered sugar (optional glaze)
  • 23 tablespoons lemon juice (for glaze)

Instructions

  • Preheat oven to 350°F and prepare a loaf pan with grease and parchment paper.
  • Whisk together flour, baking powder, baking soda, and salt in a bowl.
  • In another bowl, mix sugar and eggs, then add oil, sourdough discard, lemon juice, zest, vanilla, and milk.
