- 1 cup unsalted butter, softened
- 1 ¾ cups granulated sugar
- 4 large eggs
- 2 ½ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 cup whole milk
- 2 teaspoons vanilla extract
- 1 cup fresh strawberries, chopped
- 1 cup powdered sugar
- 2–3 tablespoons strawberry puree
- 1 teaspoon lemon juice
Instructions
- Preheat oven to 350°F and grease a loaf or bundt pan.
- Beat butter and sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition.
- Whisk flour, baking powder, and salt in a separate bowl.
- Alternate adding dry ingredients and milk into the batter.
- Stir in vanilla and fold in chopped strawberries.
- Pour batter into pan and smooth the top.
- Bake for 55–65 minutes until a toothpick comes out clean.
- Cool the cake completely on a wire rack.
- Mix glaze ingredients and drizzle over the cooled cake.
