Ingredients

  • 1 cup unsweetened almond milk
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 to 2 tablespoons maple syrup or honey
  • 1/2 teaspoon vanilla extract
  • Pinch of sea salt
  • 1/4 cup Greek yogurt (optional)
  • Fresh berries for topping
  • Coconut flakes for topping
  • Sliced almonds or granola for topping

Instructions

  • In a bowl or jar, whisk together almond milk, lemon juice, lemon zest, maple syrup, vanilla extract, and sea salt.
  • Slowly add chia seeds while whisking continuously.
  • Let the mixture rest for 5 minutes, then stir again thoroughly.
  • Cover and refrigerate for at least 3 to 4 hours or overnight.
  • Stir the pudding well before serving and add extra milk if needed.
  • Spoon into bowls or jars and add desired toppings.
