- 1/4 cup Greek yogurt (optional)

Instructions
- In a bowl or jar, whisk together almond milk, lemon juice, lemon zest, maple syrup, vanilla extract, and sea salt.
- Slowly add chia seeds while whisking continuously.
- Let the mixture rest for 5 minutes, then stir again thoroughly.
- Cover and refrigerate for at least 3 to 4 hours or overnight.
- Stir the pudding well before serving and add extra milk if needed.
- Spoon into bowls or jars and add desired toppings.
- Serve chilled and enjoy.
