Description

Ingredients

  • 1 lb apricots, pitted and chopped
  • 1/3 cup sugar
  • 2 tbsp lemon juice
  • 1/4 cup water
  • 1 tsp vanilla extract (optional)
  • 1/2 tsp cinnamon (optional)
  • Pinch of salt

Instructions

  1. Wash, pit, and chop the apricots into medium pieces.
  2. Add apricots, sugar, lemon juice, water, and salt to a saucepan.
  3. Cook over medium heat until the mixture begins to simmer.
  4. Reduce heat and let it simmer for 15 to 20 minutes, stirring occasionally.
  5. Lightly mash some of the fruit while keeping a few chunks.
  6. Adjust thickness by simmering longer if needed.
  7. Remove from heat, cool completely, and store in a jar.
