  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon ground cloves
  • 1 cup granulated sugar (200 g)
  • 1/2 cup packed light brown sugar (100 g)
  • 2 large eggs
  • 1 cup pumpkin puree (240 g)
  • 1/2 cup vegetable oil (120 ml)
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk (30 ml)
  • 8 oz. cream cheese, softened (226 g)
  • 1/4 cup granulated sugar (50 g)
  • 1 egg yolk
  • 1 teaspoon vanilla extract
  • 1/3 cup all-purpose flour (42 g)
  • 1/4 cup brown sugar (50 g)
  • 1/2 teaspoon ground cinnamon
  • 2 tablespoons cold butter (28 g)

Instructions

  1. Preheat the oven to 375°F (190°C) and line a 12-cup muffin pan with paper liners.
  2. Beat the softened cream cheese with sugar, egg yolk, and vanilla until smooth and creamy.
  3. Whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, ginger, and cloves in a large bowl.
  4. In a separate bowl, whisk together the granulated sugar, brown sugar, eggs, pumpkin puree, oil, milk, and vanilla.
  5. Gently fold the wet ingredients into the dry ingredients until just combined. Do not overmix.
  6. Spoon pumpkin batter into each muffin liner, add cream cheese filling to the center, then cover with more pumpkin batter.
  7. Combine flour, brown sugar, and cinnamon for the streusel. Cut in the cold butter until coarse crumbs form.
  8. Sprinkle the streusel evenly over each muffin.
  9. Bake for 20 to 24 minutes, or until the pumpkin portion tests done with a toothpick.
  10. Cool the muffins in the pan for 10 minutes, then transfer them to a wire rack to cool completely.
