Description

These slow-cooker fajitas are packed with bold flavor and practically make themselves. Perfect for busy nights when you want something warm, juicy, and seriously satisfying.


Ingredients

  • 2 lb. boneless skinless chicken breasts or thighs
  • 3 bell peppers, sliced
  • 1 large onion, sliced
  • 3 garlic cloves, minced
  • 1 can diced tomatoes with green chilies, 10 oz.
  • 2 tbsp. olive oil
  • 2 tsp. chili powder
  • 1 tsp. smoked paprika
  • 1 tsp. cumin
  • 1 tsp. onion powder
  • 1 tsp. garlic powder
  • 1 tsp. salt
  • 1/2 tsp. black pepper
  • Juice of 1 lime
  • 8 flour or corn tortillas

Instructions

  • Slice the peppers and onions into thin strips.
  • Mix chili powder, smoked paprika, cumin, onion powder, garlic powder, salt, and pepper in a bowl.
  • Place onions and half the peppers into the slow cooker.
  • Rub seasoning over the chicken and place it on top of the vegetables.
  • Add garlic and diced tomatoes with green chilies.
  • Drizzle olive oil over the mixture.
  • Cover and cook on LOW for 5-6 hours or HIGH for 3-4 hours.
  • Add remaining peppers during the final 45 minutes if desired.
  • Remove chicken and shred with two forks.
  • Return shredded chicken to the slow cooker and stir well.
  • Add lime juice and mix thoroughly.
  • Warm tortillas and fill with the fajita mixture.
  • Add toppings if desired and serve hot.
