These slow-cooker fajitas are packed with bold flavor and practically make themselves. Perfect for busy nights when you want something warm, juicy, and seriously satisfying.

- 2 lb. boneless skinless chicken breasts or thighs
- 3 bell peppers, sliced
- 1 large onion, sliced
- 3 garlic cloves, minced
- 1 can diced tomatoes with green chilies, 10 oz.
- 2 tbsp. olive oil
- 2 tsp. chili powder
- 1 tsp. smoked paprika
- 1 tsp. cumin
- 1 tsp. onion powder
- 1 tsp. garlic powder
- 1 tsp. salt
- 1/2 tsp. black pepper
- Juice of 1 lime
- 8 flour or corn tortillas
Instructions
- Slice the peppers and onions into thin strips.
- Mix chili powder, smoked paprika, cumin, onion powder, garlic powder, salt, and pepper in a bowl.
- Place onions and half the peppers into the slow cooker.
- Rub seasoning over the chicken and place it on top of the vegetables.
- Add garlic and diced tomatoes with green chilies.
- Drizzle olive oil over the mixture.
- Cover and cook on LOW for 5-6 hours or HIGH for 3-4 hours.
- Add remaining peppers during the final 45 minutes if desired.
- Remove chicken and shred with two forks.
- Return shredded chicken to the slow cooker and stir well.
- Add lime juice and mix thoroughly.
- Warm tortillas and fill with the fajita mixture.
- Add toppings if desired and serve hot.
