Ingredients

  • 2 lbs ground beef
  • 1 cup Italian breadcrumbs
  • 2 large eggs
  • 1 small onion, finely diced
  • 4 garlic cloves, minced
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley
  • 1 cup marinara sauce, divided
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons milk
  • 1 tablespoon olive oil

Instructions

  • Preheat oven to 375°F and prepare a baking sheet or baking dish.
  • Heat olive oil in a skillet and sauté onion until soft. Add garlic and cook briefly.
  • In a large bowl, combine beef, breadcrumbs, eggs, Parmesan, seasonings, parsley, milk, and half the marinara sauce.
  • Add cooked onion and garlic mixture to the bowl and mix gently.
  • Shape mixture into a loaf and place on the prepared baking sheet.
  • Spread remaining marinara sauce over the top.
  • Bake for 45 minutes uncovered.
  • Sprinkle mozzarella cheese on top and return to the oven for 10 to 15 minutes.
  • Rest the meatloaf for 10 minutes before slicing and serving.
