Ingredients

  • 1 cup dried green or brown lentils
  • 3 cups water
  • 1 teaspoon salt
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 garlic clove, minced
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried oregano
  • 1/3 cup feta cheese (optional)

Instructions

  • Rinse lentils and cook them in water with salt until tender but firm.
  • Drain lentils and let them cool slightly.
  • Chop tomatoes, cucumber, onion, and parsley and place in a bowl.
  • Whisk olive oil, lemon juice, garlic, salt, pepper, and oregano.
  • Combine lentils with vegetables and pour dressing over.
  • Toss gently and let sit for 15 minutes before serving.
