- 1 cup dried green or brown lentils
- 3 cups water
- 1 teaspoon salt
- 1 cup cherry tomatoes, halved
- 1 medium cucumber, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 garlic clove, minced
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried oregano
- 1/3 cup feta cheese (optional)
Instructions
- Rinse lentils and cook them in water with salt until tender but firm.
- Drain lentils and let them cool slightly.
- Chop tomatoes, cucumber, onion, and parsley and place in a bowl.
- Whisk olive oil, lemon juice, garlic, salt, pepper, and oregano.
- Combine lentils with vegetables and pour dressing over.
- Toss gently and let sit for 15 minutes before serving.
