Ingredients

  • 3–4 lb corned beef brisket with spice packet
  • 4 cups water or beef broth
  • 1 lb baby potatoes, halved
  • 4 medium carrots, chopped
  • 1 medium onion, sliced
  • 4 cloves garlic, minced
  • 1 small head cabbage, cut into wedges
  • 1 tbsp Dijon mustard
  • 1 tbsp apple cider vinegar
  • 1 tsp black pepper
  • Fresh parsley for garnish

Instructions

  • Place onion and garlic in the crockpot, then set the corned beef on top fat-side up.
  • Sprinkle the spice packet over the brisket.
  • Pour in water or broth and add mustard, vinegar, and black pepper.
  • Add potatoes and carrots around the beef.
  • Cover and cook on low for 8–9 hours or high for 4–5 hours.
  • Add cabbage during the last 2 hours of cooking.
  • Remove beef, rest for 10 minutes, then slice against the grain.
  • Serve with vegetables and broth, garnished with parsley.
