- 3–4 lb corned beef brisket with spice packet
- 4 cups water or beef broth
- 1 lb baby potatoes, halved
- 4 medium carrots, chopped
- 1 medium onion, sliced
- 4 cloves garlic, minced
- 1 small head cabbage, cut into wedges
- 1 tbsp Dijon mustard
- 1 tbsp apple cider vinegar
- 1 tsp black pepper
- Fresh parsley for garnish
Instructions
- Place onion and garlic in the crockpot, then set the corned beef on top fat-side up.
- Sprinkle the spice packet over the brisket.
- Pour in water or broth and add mustard, vinegar, and black pepper.
- Add potatoes and carrots around the beef.
- Cover and cook on low for 8–9 hours or high for 4–5 hours.
- Add cabbage during the last 2 hours of cooking.
- Remove beef, rest for 10 minutes, then slice against the grain.
- Serve with vegetables and broth, garnished with parsley.
