Description
This cozy apple cider loaf tastes like your favorite fall doughnut in every tender, cinnamon-sugar coated slice. It is easy enough for a weekend bake and special enough for any autumn gathering.

- 1 ½ cups (180 g) all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon fine salt
- 1 ½ teaspoons ground cinnamon
- ½ teaspoon ground nutmeg
- ½ cup (113 g) unsalted butter, melted
- ¾ cup (150 g) granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- ¾ cup (180 ml) apple cider
- 2 tablespoons (30 ml) applesauce
- 2 tablespoons (28 g) melted butter, for topping
- ¼ cup (50 g) granulated sugar, for topping
- 1 teaspoon ground cinnamon, for topping
Instructions
- Preheat the oven to 350°F (175°C). Grease and line a 9 x 5-inch loaf pan with parchment paper.
- Whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In a separate bowl, whisk the melted butter and sugar. Add the eggs one at a time, then mix in the vanilla, apple cider, and applesauce.
- Gently fold the dry ingredients into the wet mixture until just combined. Do not overmix.
- Transfer the batter to the prepared loaf pan and smooth the top.
- Bake for 48 to 58 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Cool the loaf in the pan for 10 minutes, then transfer it to a wire rack.
- Brush the warm loaf with melted butter.
- Mix the topping sugar and cinnamon together, then sprinkle generously over the buttered loaf.
- Cool slightly, slice, and serve
