- 24 chocolate sandwich cookies
- 6 tablespoons unsalted butter, melted
- 16 oz. full-fat cream cheese, softened
- 1 cup powdered sugar
- 8 oz. semi-sweet chocolate, melted and cooled
- 1 teaspoon vanilla extract
- 1 1/2 cups heavy whipping cream, cold
- 2 tablespoons cocoa powder
- 1/4 teaspoon salt
- Whipped cream, for garnish (optional)
- Chocolate curls or shavings, for garnish (optional)
- Fresh raspberries, for garnish (optional)
Instructions
- Crush the chocolate sandwich cookies into fine crumbs and mix with the melted butter.
- Press the crumb mixture firmly into a 9-inch springform pan and chill.
- Melt the semi-sweet chocolate and let it cool slightly.
- Beat the softened cream cheese until smooth.
- Mix in the powdered sugar, cocoa powder, vanilla extract, and salt.
- Add the cooled melted chocolate and beat until fully combined.
- Whip the heavy cream until medium-stiff peaks form.
- Gently fold the whipped cream into the chocolate mixture.
- Spread the filling evenly over the prepared crust.
- Refrigerate for at least 6 hours or overnight until fully set.
- Remove from the pan, garnish as desired, slice, and serve chilled.
