Description

These No-bake Pecan Pie Bites deliver all the cozy sweetness of classic pecan pie in perfectly poppable treats. They’re quick to prepare, wonderfully chewy, and ideal for holiday dessert trays or everyday sweet cravings.

Ingredients

Scale
  • 1 cup (110 g) pecan halves
  • 1 cup (175 g) soft pitted Medjool dates
  • 2 tablespoons (32 g) creamy almond butter
  • 2 tablespoons (30 ml) pure maple syrup
  • 1 teaspoon (5 ml) vanilla extract
  • ½ teaspoon ground cinnamon
  • â…› teaspoon fine sea salt
  • 2–3 tablespoons (15–22 g) finely chopped pecans, optional

Instructions

  1. Pulse the pecan halves in a food processor until coarsely chopped. Reserve 2–3 tablespoons of chopped pecans for coating, if desired.
  2. Add the pitted dates and pulse until they break into small, sticky pieces.
  3. Add the almond butter, maple syrup, vanilla extract, cinnamon, sea salt, and chopped pecans. Pulse until the mixture holds together when pressed.
  4. If the mixture feels dry, add a teaspoon of maple syrup or almond butter. If it feels too sticky, add a little finely ground pecan.
  5. Refrigerate the mixture for 15–20 minutes to make rolling easier.
  6. Scoop approximately 1 tablespoon of mixture at a time and roll between your palms to form 16–18 bite-sized balls.
  7. Roll each ball in the reserved chopped pecans, gently pressing the pieces onto the surface.
  8. Arrange the bites on a parchment-lined tray and refrigerate for 20–30 minutes until firm.
  9. Serve chilled or slightly softened at room temperature. Store leftovers in an airtight container in the refrigerator for up to 7 days, or freeze for up to 3 months for best quality.
