Ingredients

  • 1 lb chicken thighs or breasts
  • 8 cups chicken broth
  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 3 carrots, sliced
  • 3 celery stalks, chopped
  • 1 tsp fresh ginger, grated
  • 1 tsp turmeric powder
  • 1 tsp dried thyme
  • 1 bay leaf
  • Salt and black pepper to taste
  • 1 cup spinach or kale
  • Juice of 1/2 lemon
  • 2 tbsp fresh parsley, chopped

Instructions

  • Heat olive oil in a large pot and sauté onion until soft.
  • Add garlic and ginger, cooking until fragrant.
  • Stir in carrots and celery and cook for a few minutes.
  • Add chicken and pour in broth.
  • Season with turmeric, thyme, bay leaf, salt, and pepper.
  • Bring to a boil, then reduce heat and simmer for 30 minutes.
  • Remove chicken, shred it, and return to the pot.
  • Add spinach and cook until wilted.
  • Stir in lemon juice and parsley, then serve hot.
