- 1 lb chicken thighs or breasts
- 8 cups chicken broth
- 1 tbsp olive oil
- 1 medium onion, diced
- 3 garlic cloves, minced
- 3 carrots, sliced
- 3 celery stalks, chopped
- 1 tsp fresh ginger, grated
- 1 tsp turmeric powder
- 1 tsp dried thyme
- 1 bay leaf
- Salt and black pepper to taste
- 1 cup spinach or kale
- Juice of 1/2 lemon
- 2 tbsp fresh parsley, chopped
Instructions
- Heat olive oil in a large pot and sauté onion until soft.
- Add garlic and ginger, cooking until fragrant.
- Stir in carrots and celery and cook for a few minutes.
- Add chicken and pour in broth.
- Season with turmeric, thyme, bay leaf, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 30 minutes.
- Remove chicken, shred it, and return to the pot.
- Add spinach and cook until wilted.
- Stir in lemon juice and parsley, then serve hot.
