  • 1 cup (226 g) unsalted butter, melted
  • 1 cup (200 g) packed light brown sugar
  • 1/2 cup (100 g) granulated sugar
  • 1 large egg
  • 2 teaspoons (10 ml) vanilla extract
  • 1 1/2 cups (188 g) all-purpose flour
  • 2 cups (180 g) old-fashioned rolled oats
  • 1 teaspoon (5 g) baking powder
  • 1/2 teaspoon (3 g) salt
  • 1 teaspoon (2 g) ground cinnamon
  • 1 1/2 cups (150 g) dried cranberries

Instructions

  • Preheat the oven to 350°F (175°C) and line an 8-inch square baking pan with parchment paper.
  • Whisk the melted butter, brown sugar, and granulated sugar together until smooth.
  • Add the egg and vanilla extract, then whisk until fully combined.
  • In a separate bowl, stir together the flour, rolled oats, baking powder, salt, and cinnamon.
  • Gradually add the dry ingredients to the wet ingredients and stir just until a soft dough forms.
  • Fold in the dried cranberries until evenly distributed.
  • Press about two-thirds of the mixture firmly into the prepared pan.
  • Crumble the remaining mixture evenly over the top.
  • Bake for 30 to 36 minutes, until the edges and top turn golden brown.
  • Cool completely in the pan before lifting out and slicing into squares.
