Wake up to a breakfast that feels like a treat. This creamy peach parfait is easy to prep the night before and makes every morning a little sweeter.


Ingredients

  • 1 cup plain Greek yogurt
  • 3 tablespoons chia seeds
  • 1/2 cup milk of choice
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 medium ripe peach, diced
  • 1/4 teaspoon ground cinnamon (optional)
  • Pinch of sea salt
  • 1/4 cup granola
  • 1 tablespoon sliced almonds
  • Fresh mint leaves for garnish (optional)

Instructions

  • Whisk together the Greek yogurt, milk, honey, vanilla extract, cinnamon, and salt until smooth.
  • Stir in the chia seeds thoroughly.
  • Let the mixture rest for 10 minutes, then stir again.
  • Fold in half of the diced peaches.
  • Divide the mixture into jars or containers and cover.
  • Refrigerate overnight or for at least 6 hours.
  • Stir gently before serving and add a splash of milk if needed.
  • Layer with the remaining peaches.
  • Top with granola, sliced almonds, and fresh mint if desired.
  • Serve immediately and enjoy.
