- 3 tablespoons chia seeds
- 1/2 cup milk of choice
- 1 tablespoon honey or maple syrup
- 1 teaspoon vanilla extract
- 1 medium ripe peach, diced
- 1/4 teaspoon ground cinnamon (optional)
- Pinch of sea salt
- 1/4 cup granola
- 1 tablespoon sliced almonds
- Fresh mint leaves for garnish (optional)
Instructions
- Whisk together the Greek yogurt, milk, honey, vanilla extract, cinnamon, and salt until smooth.
- Stir in the chia seeds thoroughly.
- Let the mixture rest for 10 minutes, then stir again.
- Fold in half of the diced peaches.
- Divide the mixture into jars or containers and cover.
- Refrigerate overnight or for at least 6 hours.
- Stir gently before serving and add a splash of milk if needed.
- Layer with the remaining peaches.
- Top with granola, sliced almonds, and fresh mint if desired.
- Serve immediately and enjoy.
