  • 1/2 cup chia seeds
  • 2 tbsp maple syrup or honey
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • Pinch of salt
  • 3 medium peaches, diced
  • 1 tbsp maple syrup
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 tsp lemon juice
  • 1/2 cup rolled oats
  • 1/4 cup almond flour
  • 1 tbsp melted coconut oil or butter
  • 1 tbsp maple syrup
  • 1/2 tsp ground cinnamon
  • Pinch of salt
  • Greek yogurt (optional)
  • Chopped pecans (optional)
  • Fresh peach slices (optional)
  • Mint leaves (optional)

Instructions

  1. Whisk together the almond milk, maple syrup, vanilla extract, cinnamon, and salt.
  2. Add the chia seeds and whisk thoroughly. Let the mixture sit for 5 minutes, then whisk again.
  3. Cover and refrigerate for at least 4 hours or overnight.
  4. Cook the diced peaches with maple syrup, cinnamon, nutmeg, and lemon juice over medium heat until tender, about 6 to 8 minutes.
  5. Allow the peach mixture to cool completely.
  6. Combine the rolled oats, almond flour, melted coconut oil or butter, maple syrup, cinnamon, and salt.
  7. Bake the crumble mixture at 350°F (175°C) for 8 to 10 minutes until lightly golden, then cool.
  8. Stir the chilled chia pudding until smooth, adding a splash of milk if needed.
  9. Layer chia pudding into serving jars or bowls.
  10. Spoon the cooked peaches over the pudding.
  11. Repeat the layers until filled.
  12. Top with the oat crumble and any optional garnishes before serving.
