- 1/2 teaspoon vanilla extract (optional glaze)
Instructions
- Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- Whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- Beat the butter with the granulated sugar and brown sugar until light and fluffy.
- Mix in the egg and vanilla extract.
- Gradually add the dry ingredients and mix until just combined.
- Gently fold the diced peaches into the dough.
- Mix the crumble topping ingredients until coarse crumbs form.
- Scoop portions of dough onto the prepared baking sheets.
- Sprinkle the crumble topping over each cookie and press lightly.
- Bake for 12 to 15 minutes until the edges are lightly golden.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack.
