- 1 cup granulated sugar
- ½ cup light brown sugar
- 1 teaspoon baking powder
- ¼ teaspoon salt
- 1 teaspoon ground cinnamon
- 1 cup unsalted butter, cold and cubed
- 1 large egg
- 1 teaspoon vanilla extract
- 4 cups fresh peaches, peeled and diced
- ¼ cup granulated sugar
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
- ½ teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
Instructions
- Preheat oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.
- Mix flour, sugars, baking powder, salt, and cinnamon.
- Cut in cold butter until coarse crumbs form.
- Mix in the egg and vanilla until crumbly.
- Reserve one-third of the crumb mixture.
- Press the remaining crumbs firmly into the prepared pan.
- Combine peaches, sugar, cornstarch, lemon juice, cinnamon, and nutmeg.
- Spread the peach filling evenly over the crust.
- Sprinkle the reserved crumb mixture over the peaches.
- Bake for 45 to 50 minutes until golden brown and bubbly.
- Cool completely before removing from the pan.
- Slice into bars and serve plain or with vanilla ice cream.
