This creamy pumpkin chia pudding is the cozy fall breakfast you will want on repeat. It is easy to make ahead, wonderfully creamy, and full of warm pumpkin spice flavor.

- 1 cup (240 g) pumpkin puree
- 1 cup (240 g) plain Greek yogurt
- 1 cup (240 ml) milk
- 1/4 cup (40 g) chia seeds
- 2 tablespoons (30 ml) pure maple syrup
- 1 teaspoon (5 ml) vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon pumpkin pie spice
- 1/8 teaspoon salt
- Chopped pecans, pumpkin seeds, cinnamon, whipped cream, or maple syrup for topping
Instructions
- Add pumpkin puree, Greek yogurt, milk, maple syrup, vanilla, cinnamon, pumpkin pie spice, and salt to a mixing bowl. Whisk until smooth.
- Add the chia seeds and whisk thoroughly to distribute them evenly.
- Let the mixture rest for 5 minutes, then stir again to prevent clumping.
- Cover and refrigerate for at least 4 hours or overnight.
- Stir the pudding before serving and add a splash of milk if it is too thick.
- Spoon into jars or bowls and add your favorite toppings.
- Serve chilled and enjoy.
