Ingredients

  • 2 1/2 lb. ripe tomatoes, halved
  • 1 medium yellow onion, quartered
  • 5 garlic cloves, peeled
  • 2 tbsp. extra-virgin olive oil
  • 1 tsp. kosher salt
  • 1/2 tsp. black pepper
  • 1 tsp. dried Italian seasoning
  • 2 cups vegetable broth
  • 1 tbsp. tomato paste
  • 1 tsp. sugar, optional
  • 1/2 cup heavy cream, optional
  • 2 tbsp. fresh basil, chopped
  • 1 tbsp. balsamic vinegar, optional

Instructions

  • Preheat the oven to 425°F (220°C).
  • Arrange the halved tomatoes, onion, and garlic on a large baking sheet.
  • Drizzle the vegetables with olive oil and season with salt, pepper, and Italian seasoning.
  • Roast for 35 to 45 minutes, until the tomatoes are soft and caramelized around the edges.
  • Transfer the roasted vegetables to a large pot.
  • Add the vegetable broth and tomato paste, then simmer for 10 minutes.
  • Blend the soup with an immersion blender until smooth or leave slightly chunky if preferred.
  • Stir in the heavy cream if using.
  • Add sugar or balsamic vinegar if needed to balance the acidity.
  • Taste and adjust the seasoning.
  • Garnish with fresh basil and serve hot with crusty bread or grilled cheese.
