- 8 large eggs
- 1/4 cup whole milk or cream
- 1 tablespoon olive oil
- 2 cups fresh spinach, chopped
- 1/2 cup crumbled feta cheese
- 1/4 cup diced onion
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon dried oregano
- 1/4 cup cherry tomatoes, halved
Instructions
- Preheat oven to 375°F and whisk eggs with milk, salt, pepper, and oregano.
- Heat olive oil in a skillet and cook onion until soft, then add garlic.
- Stir in spinach and cook until wilted.
- Pour egg mixture into skillet and gently stir.
- Add feta and tomatoes on top.
- Cook on stovetop until edges set.
- Transfer to oven and bake until fully set.
- Let rest briefly, slice, and serve
