Ingredients

  • 8 large eggs
  • 1/4 cup whole milk or cream
  • 1 tablespoon olive oil
  • 2 cups fresh spinach, chopped
  • 1/2 cup crumbled feta cheese
  • 1/4 cup diced onion
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon dried oregano
  • 1/4 cup cherry tomatoes, halved

Instructions

  • Preheat oven to 375°F and whisk eggs with milk, salt, pepper, and oregano.
  • Heat olive oil in a skillet and cook onion until soft, then add garlic.
  • Stir in spinach and cook until wilted.
  • Pour egg mixture into skillet and gently stir.
  • Add feta and tomatoes on top.
  • Cook on stovetop until edges set.
  • Transfer to oven and bake until fully set.
  • Let rest briefly, slice, and serve
