- 1 cup unsweetened applesauce
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1/3 cup vegetable oil or melted butter
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/4 teaspoon nutmeg
- 1/2 teaspoon salt
Instructions
- Preheat oven to 375°F and prepare a muffin tin.
- Mix sourdough discard, applesauce, sugars, oil, eggs, and vanilla until smooth.
- Whisk flour, baking soda, baking powder, cinnamon, nutmeg, and salt in another bowl.
- Combine wet and dry ingredients gently until just mixed.
- Let batter rest for 10 minutes.
- Fill muffin cups and bake for 18–22 minutes.
- Cool slightly before serving.
