Ingredients

  • 1 cup unsweetened applesauce
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/3 cup vegetable oil or melted butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon salt

Instructions

  • Preheat oven to 375°F and prepare a muffin tin.
  • Mix sourdough discard, applesauce, sugars, oil, eggs, and vanilla until smooth.
  • Whisk flour, baking soda, baking powder, cinnamon, nutmeg, and salt in another bowl.
  • Combine wet and dry ingredients gently until just mixed.
  • Let batter rest for 10 minutes.
  • Fill muffin cups and bake for 18–22 minutes.
  • Cool slightly before serving.
