Description

Halloween dinner just got a delicious makeover. These spooky stuffed meatballs turn classic spaghetti into a fun, cheesy centerpiece everyone will want to try.


Ingredients

  • 1 lb. (454 g) ground beef
  • 1/2 cup (50 g) Italian-style breadcrumbs
  • 1/4 cup (25 g) grated Parmesan cheese
  • 1 large egg
  • 2 garlic cloves, minced
  • 1 tsp. Italian seasoning
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 4 oz. (113 g) low-moisture mozzarella cheese, cut into small cubes
  • 12 oz. (340 g) spaghetti
  • 24 oz. (680 g) marinara sauce
  • 1 tbsp. (15 ml) olive oil
  • 2 tbsp. (8 g) fresh parsley, chopped
  • Extra Parmesan cheese for serving
  • Sliced black olives for spooky decoration

Instructions

  • Preheat oven to 400°F (200°C).
  • Combine ground beef, breadcrumbs, Parmesan, egg, garlic, Italian seasoning, salt, and pepper in a large bowl.
  • Divide the mixture into about 16 portions and flatten each portion slightly.
  • Place a mozzarella cube in the center of each portion and carefully seal the meat around the cheese.
  • Arrange the stuffed meatballs on a lightly oiled baking sheet.
  • Bake for 18 to 22 minutes, or until cooked through and browned.
  • Warm the marinara sauce in a saucepan over medium-low heat for 10 to 15 minutes.
  • Add the cooked meatballs to the marinara and simmer for about 5 minutes.
  • Cook spaghetti in salted boiling water until al dente, then drain.
  • Toss spaghetti with some marinara sauce and add a little pasta water if needed.
  • Arrange the spaghetti on a serving platter and place the stuffed meatballs around the noodles.
  • Decorate the meatballs with sliced black olives to create spooky eyes.
  • Sprinkle with fresh parsley and Parmesan.
  • Serve immediately while the cheese centers are warm and gooey.
