- 1 cup old-fashioned rolled oats
- 3/4 cup granulated sugar
- 1/2 cup light brown sugar, packed
- 1 teaspoon baking powder

- 1 cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 3 cups fresh strawberries, diced
- 1/4 cup granulated sugar
- 2 tablespoons cornstarch
- 1 tablespoon fresh lemon juice
- 1 teaspoon lemon zest
- 1/2 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.
- Mix the flour, oats, sugars, baking powder, and salt in a large bowl.
- Stir in the melted butter and vanilla until crumbly.
- Reserve about 1 1/2 cups of the crumble mixture for the topping.
- Firmly press the remaining mixture into the prepared pan to form the crust.
- Toss the strawberries with the sugar, cornstarch, lemon juice, lemon zest, and vanilla.
- Spread the strawberry filling evenly over the crust.
- Sprinkle the reserved crumble mixture over the strawberry layer.
- Bake for 40 to 45 minutes until the topping is golden and the filling is bubbling.
- Cool completely before lifting the bars from the pan and slicing into squares.
- Serve plain or with whipped cream or vanilla ice cream.
