- 1/4 cup granulated sugar
- 1 tablespoon fresh lemon juice
- 1 teaspoon vanilla extract
- 1 teaspoon powdered gelatin
- 2 tablespoons cold water
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar
- Fresh strawberries for garnish
- Mint leaves for garnish (optional)
Instructions
- Wash, hull, and blend the strawberries with sugar, lemon juice, and vanilla until smooth.
- Bloom the gelatin in cold water for 5 minutes, then warm gently until dissolved.
- Stir the dissolved gelatin into the strawberry puree and let it cool.
- Whip the cold heavy cream with powdered sugar until soft peaks form.
- Mix one-third of the whipped cream into the strawberry mixture.
- Gently fold in the remaining whipped cream until fully combined.
- Spoon the mousse into serving glasses or dessert bowls.
- Refrigerate for at least 4 hours or overnight.
- Garnish with fresh strawberries, whipped cream, and mint if desired.
