- 1 ½ cups old-fashioned oats
- 1 ½ cups all-purpose flour
- 1 cup unsalted butter, melted
- ¾ cup brown sugar, packed
- ¼ cup granulated sugar
- 1 teaspoon vanilla extract
- ½ teaspoon baking soda
- ½ teaspoon salt
- 2 cups fresh strawberries, diced
- 1 tablespoon cornstarch
- 1 tablespoon lemon juice
- 2 tablespoons strawberry jam
Instructions
- Preheat oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.
- Mix oats, flour, brown sugar, granulated sugar, baking soda, and salt in a large bowl.
- Add melted butter and vanilla extract, then stir until crumbly.
- Reserve 1 ½ cups of the mixture for topping.
- Press the remaining mixture into the prepared baking pan to form the crust.
- Toss strawberries with lemon juice, cornstarch, and strawberry jam in a separate bowl.
- Spread the strawberry mixture evenly over the crust.
- Sprinkle the reserved crumble mixture over the strawberries.
- Bake for 38–45 minutes until golden brown and bubbly.
- Cool completely before slicing into bars and serving
