Ingredients

  • 1 ½ cups old-fashioned oats
  • 1 ½ cups all-purpose flour
  • 1 cup unsalted butter, melted
  • ¾ cup brown sugar, packed
  • ¼ cup granulated sugar
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2 cups fresh strawberries, diced
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • 2 tablespoons strawberry jam

Instructions

  • Preheat oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.
  • Mix oats, flour, brown sugar, granulated sugar, baking soda, and salt in a large bowl.
  • Add melted butter and vanilla extract, then stir until crumbly.
  • Reserve 1 ½ cups of the mixture for topping.
  • Press the remaining mixture into the prepared baking pan to form the crust.
  • Toss strawberries with lemon juice, cornstarch, and strawberry jam in a separate bowl.
  • Spread the strawberry mixture evenly over the crust.
  • Sprinkle the reserved crumble mixture over the strawberries.
  • Bake for 38–45 minutes until golden brown and bubbly.
  • Cool completely before slicing into bars and serving
