  • 2 cups dried white beans, soaked overnight
  • 1 large onion, diced
  • 3 carrots, chopped
  • 3 celery stalks, chopped
  • 4 cloves garlic, minced
  • 1 bay leaf
  • 1 tsp dried thyme
  • 8 cups chicken broth or water
  • Salt and black pepper to taste

Instructions

  • Soak white beans overnight, then drain.
  • Sauté onion, carrots, and celery in a large pot until softened.
  • Add garlic and cook briefly until fragrant.
  • Add ham bone, beans, bay leaf, and thyme.
  • Pour in broth and bring to a boil, then reduce to a simmer.
  • Cook for 1.5–2 hours until beans are tender.
  • Remove ham bone, shred meat, and return it to the pot.
  • Season, adjust flavor, and serve hot.
