- 1 large ham bone (1.5–2 lbs / 700–900 g)
- 2 cups dried white beans, soaked overnight
- 1 large onion, diced
- 3 carrots, chopped
- 3 celery stalks, chopped
- 4 cloves garlic, minced
- 1 bay leaf
- 1 tsp dried thyme
- 8 cups chicken broth or water
- Salt and black pepper to taste
Instructions
- Soak white beans overnight, then drain.
- Sauté onion, carrots, and celery in a large pot until softened.
- Add garlic and cook briefly until fragrant.
- Add ham bone, beans, bay leaf, and thyme.
- Pour in broth and bring to a boil, then reduce to a simmer.
- Cook for 1.5–2 hours until beans are tender.
- Remove ham bone, shred meat, and return it to the pot.
- Season, adjust flavor, and serve hot.
