Description

Delicious zucchini bites with garlic flavor, crispy edges, and a soft center. A quick, healthy snack or appetizer everyone will enjoy.


Ingredients

  • 2 medium zucchini, grated
  • 1 tsp salt
  • 2 large eggs
  • 1 cup grated Parmesan cheese
  • 3/4 cup panko breadcrumbs
  • 3 garlic cloves, minced
  • 2 tbsp chopped fresh parsley
  • 1 tsp Italian seasoning
  • 1/2 tsp onion powder
  • 1/4 tsp black pepper
  • 2 tbsp olive oil
  • Marinara sauce (optional)
  • Ranch dressing (optional)
  • Garlic aioli (optional)
  • Fresh parsley for garnish (optional)
  • Extra grated Parmesan for garnish (optional)

Instructions

  • Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Grate the zucchini, sprinkle it with salt, and let it sit for 10 to 15 minutes.
  • Squeeze the zucchini thoroughly with a clean kitchen towel to remove excess moisture.
  • Combine the zucchini with eggs, Parmesan, breadcrumbs, garlic, parsley, Italian seasoning, onion powder, black pepper, and olive oil.
  • Mix until well combined.
  • Shape the mixture into tablespoon-sized balls or small patties.
  • Arrange the bites on the prepared baking sheet with space between each one.
  • Brush or lightly spray the tops with olive oil.
  • Bake for 18 to 22 minutes.
  • Flip the bites and bake for another 6 to 8 minutes until golden and crispy.
  • Cool for a few minutes after removing them from the oven.
  • Garnish with parsley and Parmesan, then serve with your favorite dipping sauce.
