- 2 medium zucchini, grated
- 1 tsp salt
- 2 large eggs
- 1 cup grated Parmesan cheese
- 3/4 cup panko breadcrumbs
- 3 garlic cloves, minced
- 2 tbsp chopped fresh parsley
- 1 tsp Italian seasoning
- 1/2 tsp onion powder
- 1/4 tsp black pepper
- 2 tbsp olive oil
- Marinara sauce (optional)
- Ranch dressing (optional)
- Garlic aioli (optional)
- Fresh parsley for garnish (optional)
- Extra grated Parmesan for garnish (optional)
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Grate the zucchini, sprinkle it with salt, and let it sit for 10 to 15 minutes.
- Squeeze the zucchini thoroughly with a clean kitchen towel to remove excess moisture.
- Combine the zucchini with eggs, Parmesan, breadcrumbs, garlic, parsley, Italian seasoning, onion powder, black pepper, and olive oil.
- Mix until well combined.
- Shape the mixture into tablespoon-sized balls or small patties.
- Arrange the bites on the prepared baking sheet with space between each one.
- Brush or lightly spray the tops with olive oil.
- Bake for 18 to 22 minutes.
- Flip the bites and bake for another 6 to 8 minutes until golden and crispy.
- Cool for a few minutes after removing them from the oven.
- Garnish with parsley and Parmesan, then serve with your favorite dipping sauce.
